This creamy, cheesy corn dip is a crowd pleaser at any gathering, large or small. Whoever discovered the power of cream cheese in making dips is our kind of person.
INGREDIENTS
8 oz cream cheese, softened
1 jar Dilly Dally Provisions Corn Relish (with brine)
1/2 cup shredded cheddar (substitute pepper jack for a lil’ extra kick)
1/2 tsp garlic powder
1/4 tsp smoked paprika
Salt and pepper to taste
Cilantro and scallions for garnish
Tortilla chips for serving
INSTRUCTIONS
Warm the base
In a skillet over medium-low heat, add cream cheese. Stir until smooth and melted.
Add the corn relish
Stir in the entire jar of DDP Corn Relish and heat for 3–5 minutes until everything is warmed through.
Season
Add garlic powder, paprika, salt, and pepper. Taste and adjust to your liking.
Add cheese
Stir in half the shredded cheese until melted and creamy.
Broil
Top with remaining extra cheese and broil 2–3 minutes until bubbly and begins to brown.
Serve warm
Transfer to a small bowl or serve directly from the skillet.
Garnish
Add chopped cilantro and scallions for garnish; serve with tortilla chips of choice.
